Customer Review: Use with caution!

I cut myself a couple of times, and now I am super careful with this mandoline. I do like the way it slices, but julienne slicing takes a little more effort with potatoes. I do enjoy the french fries, though, so I use it for that. You would not be able to cut sweet potato fries, though, because sweet potatoes are so hard to cut anyway, even with a knife.
That said, this mandoline is small, and easy to store. It can make very thin slices for chips, or thicker slices if you want, with 4 different thickness settings. The julienne slices are only in one size, though. I do wish someone would develop a better holder for carrots or cucumbers, as they are hard to use with the holder, but they slice easily.
I have used this to julienne potatoes for french fries, as I said above, but I had to push harder to get it done, and sometimes the ends weren't entirely cut all the way through, so I just cut the end off with a paring knife. It still beats using a paring knife to do the whole job, and it works so quickly that you have a nice pile of fries in no time. I wash the potatoes, removed any blemishes, green spots and/or eyes. Then I put the potato in the holder, set the mandoline for julienne, and push it through. One potato makes a lot of fries.
You will have the last slice of potato still in the holder to cut up, but that's not hard to cut into strips.
I highly recommend watching the DVD that comes with this product. If you don't have one, look for the video online. It helped me see how easy it is to get slices, and how to use this unit.
One thing I don't like is the fact that I occasionally have difficulty getting this mandoline to fold up, and that is why I gave it 4 stars instead of 5. I do like the fact that it is small and easy to store. I put it on the back of my wood stand for my knives. It gets used quite often, and is easy to clean.
Be careful not to lose the blade guard. It's an almost clear plastic, so I make sure I put it in the same place every time I use it, and replace it when I finished cleaning and drying the mandoline.
I've had this gadget for more than a year, and I waited until I gave it enough use to give it this review. I would buy it all over again, as it has made some kitchen tasks easier.
Things I have processed with this slicer: Cabbage (sliced into shreds), potatoes - both sliced for chips and fried potatoes, and julienned for french fries, carrots, cucumbers, zucchini, onions, bell pepper (although these are probably easier to do with a good paring knife, no fault of the slicer), apples cut into slices, and probably more.
